Aileen's Duchess Spice Cake

1 large cake
A delightful spice cake with a rich blend of flavours.
- ¾ cup butter (softened)
- 3 cups flour
- 1 ¼ cup brown sugar
- 1 ½ tsp baking soda
- 1 cup white sugar
- 1 ½ tsp ground cinnamon
- 3 eggs
- ¾ tsp ground nutmeg
- 1 ½ cup buttermilk (I usually add a little vinegar or orange juice to standard milk to substitute for buttermilk)
- ¾ tsp ground cloves
- 1 tsp salt
Preheat oven to 175°C. Line a cake tin with baking paper (or grease and flour). Makes a largish cake, (20 x 30cm rectangle or 25cm round tin).
Cream together the butter and sugars until light and creamy. Add the eggs one at a time, beating well after each addition. Mix the buttermilk in alternatively with the sifted dry ingredients. Spoon into the cake tin and bake for 50–60 minutes.
