Arabian Lamb Kebabs
- 1 kg lean lamb cut from shoulder or leg
- ½ C olive oil
- 1 tsp ground ginger
- Juice of 2 large lemons
- 1 tsp ground cumin
- 2 large cloves of garlic, crushed
- ½ tsp turmeric
- 2 tsp salt
- Capsicum
- 1 tsp black pepper
- Mushrooms
Cut the lamb into 2cm cubes. Mix all the other ingredients in a large bowl. Add the lamb and mix until all the cubes are coated. Put in a plastic bag (or two) in the fridge for at least 2 hours. Thread onto skewers with capsicum and mushrooms. Barbeque or grill till cooked, brushing with marinade while cooking.
