Bagels
16 bagels
Classic homemade bagels.
- 4 C flour
- 2 tsp salt
- 23 g compressed yeast
- 3 Tbsp sugar
- ½ C water
- ½ C milk
- 3 Tbsp oil
- 1 egg yolk
- seeds: poppy or sesame
Mix yeast, 1 Tbsp sugar and ¼ C water. Leave 15 minutes to froth.
Sift the flour, salt and the rest of the sugar.
Add the egg, milk and remaining water with the yeast to the dry ingredients.
Knead and rise (double in size, about 1 hour).
Knead again, divide into 16ths and form into rings. Stand for 10 minutes on a greased tray.
Slide into boiling water, don’t overlap. Boil 1 minute each side.
Put on a greased tray and apply the seeds.
Bake in a hot oven for 15 minutes.
