Chocolate Mousse
- 175 g dark chocolate
- 2 tbsp honey
- 3 eggs, separated
- 12.5 g powdered gelatine
- 3 tbsp hot water
- 150 ml cream
Melt the chocolate and honey into a bowl over a pan of hot water. Stir in the egg yolks and beat until smooth. Remove from the heat. Dissolve the gelatine into the water. Stir this into the chocolate mixture. Chill. Whip the cream until thick but not stiff, fold into the chocolate mixture. Whisk the egg whites until stiff and fold them in too. Pour into a mould and chill until set.
