Ginger and Lemon Syrup
Makes approximately 1.5 litres
A refreshing syrup with ginger and lemon.
- 125 g root ginger
- 375 g sugar
- 1.25 L water
- 1 heaped tsp citric acid
- 3 tbsp lemon juice
Roughly chop the ginger and put it in a saucepan with the water. Bring to the boil and simmer for 10 minutes. Add the sugar and citric acid and boil until dissolved. Allow to cool and strain to remove the ginger. Add the lemon juice and chill. Drink diluted.
