Papparkakor
Makes 2 loaves
Traditional Swedish gingerbread cookies.
- 250 g butter
- ½ Tb baking soda
- 200 ml sugar
- 150 ml whole blanched almonds
- 100 ml golden syrup
- 500 g flour
- 2 Tb cinnamon
- 2 Tb water
- 1 Tb ground cloves
- 1 Tb ginger
Melt butter and mix with sugar and golden syrup, then cool. Mix with everything else. Form into two loaves and refrigerate for half a day or so. Cut into thin slices. Bake at 175-200°C for 5 minutes.
