Steak


Take out of the fridge an hour or so before you want to eat.

Heat the fry pan till very hot (smoking). Smear some oil (or butter if no oil) on the steak, sprinkle with salt and pepper and place onto the hot pan. Don't touch for 2 minutes. Then turn over to sear the other side. A steak cut 1.5cm will be medium rare by this stage. Lower the heat a little and continue cooking until the desired stage.
