The Peoples Fudge Cake

Break the Rich Tea biscuits into small pieces, using your hands, or a rolling pin, or a food processor. Lightly beat the eggs. In a small pot, gently melt the butter and stir in the sugar and cocoa. Remove from the heat, cool to lukewarm and stir in the eggs. Return to the heat and stir until the mixture is smooth and thick and just starting to boil. Remove from the heat and stir in the walnuts, sultanas and vanilla. Then stir in the broken Rich Tea biscuits. Mix well and press into a lightly buttered sponge roll tin. Set aside to ripen in a cool place for several hours. Cut into bars, squares or wedges. The fudge cake may also be spread with traditional butter icing. Best stored in the fridge.
