Tree Tomato Shortcake

A delightful shortcake featuring tree tomatoes.
- 85 g butter
- 55 g sugar
- 1 egg
- 220 g flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/3 cup milk
- 450 g tree tomatoes (about 6), peeled and sliced
- 1/4-1/2 cup coconut
- 1 cup brown sugar
- Cream butter and sugar, beat in egg; fold in sifted flour, baking powder, and salt alternately with milk.
- Roll out half the dough; line a well-greased 9" or 10" pie plate; lay tree tomatoes evenly over shortcake; spread with sugar and coconut; cover with remaining dough.
- Bake in hot oven at 200°C for 30 minutes. Serve with custard or whipped cream.
