Tree Tomato Shortcake

A delightful shortcake featuring tree tomatoes.


  1. Cream butter and sugar, beat in egg; fold in sifted flour, baking powder, and salt alternately with milk.
  2. Roll out half the dough; line a well-greased 9" or 10" pie plate; lay tree tomatoes evenly over shortcake; spread with sugar and coconut; cover with remaining dough.
  3. Bake in hot oven at 200°C for 30 minutes. Serve with custard or whipped cream.
